What the buyer is looking for

The purpose of the concession is to operate the catering service for EHESP guests (staff, learners, outside staff): - The main restaurant in the restaurant "Brillat-Savarin" - Fast food in the cafeteria "Robert Debré", located in the main reception hall of the School - The ancillary services delivered or organized in various places within the Rennes site (for example coffee breaks, fruit trays, meal trays, served in the restaurant or delivered in the Establishment, buffets, aperitif cocktails, lunches or dinners, etc.). The catering service is granted to the concessionaire who assumes full operation and full responsibility at his own risk, including with regard to his economic and financial balance. Staff are to be taken over pursuant to Article L.1224-1 of the Labour Code, it being specified that EHESP staff assigned to the catering service are governed by the Staff Regulations. It will be made available to the concessionaire (see details of the RC "application phase").
