What the buyer is looking for
The subject of the public contract is the provision of a complete operational chain of hospital catering at the Accident Hospital in Brno, including the preparation, transport, dispensing and distribution of meals for patients and employees, including the provision of related activities and logistics services. Performance must be ensured continuously for the entire duration of the contractual relationship, i.e. every calendar day of the year, including Saturdays, Sundays, holidays and other non-working days. … contract will be carried out in accordance with generally binding legal regulations, applicable standards and regulations regarding occupational safety and technical equipment. In the event that, during the performance of the public contract, an amendment to one of the relevant regulations enters into force and effect, or another legal regulation relating to the subject matter of the public contract enters into force and effect, the contractor is obliged to follow these new legal regulations and instructions (procedures) when performing the public contract. In particular, compliance with the following legislation is required: • Regulation (EC) No 852/2004 of the European Parliament and of the Council on the hygiene of foodstuffs, • Act No 258/2000 on the protection of public health, • Act No 110/1997 on foodstuffs and tobacco products, • Decree No 137/2004 on hygiene requirements for catering services and on the principles of personal and operational hygiene in epidemiologically serious activities. The Contractor is obliged to demonstrate the implemented HACCP (Hazard Analysis and Critical Control Points) system, which is used to identify, assess and manage hazards affecting the health of food throughout the entire process from preparation to dispensing. The public contract also includes the rental of non-residential premises necessary for the preparation and distribution of meals. The specifications of the premises and the terms of the lease are set out in the draft Contract for the Lease of Non-residential Spaces and their annexes (Annex 1 Situation plan of the premises (in the ZD as a separate annex) and Annex 2 Areas of the rooms of the distribution centre (in the ZD as Annex 9). The contracting authority provides ordinary consumables (glasses, mugs, cutlery and other materials not specified in the real estate loan agreement) to the extent corresponding to the expected number of diners. The details of the delivery and distribution of meals for employees and patients of the contracting authority are specified in the draft Contract for the Provision of Catering Services and other documents of the tender documentation.
